For this project, we will compare the proteins from leg, breast, and heart of both chicken and turkey to see whether the proteins are more similar within a species or within a muscle type.
There are three main types of muscle: skeletal, cardiac, and smooth. For our experiment we are analyzing the protein found in skeletal and cardiac muscles of chicken and turkey. Different species will have different proteins present in their muscle tissue depending on how recently they shared a common ancestor. It is also known that cardiac muscle and skeletal muscle in poultry display different types of proteins and protein sub-parts (Toyota 1981). We expect the two cardiac muscle samples to be our out group, since cardiac muscle has a different function to skeletal muscle.
